Description:
Focaccia di Recco is a well known italian dish from the small Ligurian village Recco. This traditional dish which melts in the mouth can be eaten as an appetizer or as a main dish.

500g of plain flour
8 Tbsp extra-virgin olive oil
1 tsp salt
350ml cold carbonated mineral water
500g Stracchino (Italian cheese)
Preparation:
Sieve the flour into a bowl. Add 6 tablespoons of oil, salt and mineral water to it and mix the dough until it turns into one mass. Let it stand for 1 hour.
Divide the dough into four pieces. Roll each piece circular. Preheat oven to 270 degrees.
Sprinkle the baking form with a little bit of flour. Lay a sheet of a dough. Crumble the cheese, sprinkle it on the dough and cover it up with a second sheet of dough. Squeeze the edges firmly. Add 1 tablespoon of oil to the foccacia and sprinkle it with a little bit of salt. Repeat the steps with another 2 pieces of dough.
Put the baking form in the oven and bake for about 12 minutes.
