Pesto & Sauses
Salsa di Pinoli is a Ligurian specialty. A tasty sauce from pine nuts nicely fits with pasta, meat and fish dishes.
50g pine nuts,
½ glass olive oil,
Soak the breadcrumbs in vinegar, squeeze out and mix together with the pine nuts in a mortar
until a smooth consistency is achieved. Add salt and vinegar to taste. Add oil, one bit a time,
while stirring continuously.
