Pesto & Sauses
Spinach sauce alla Ligure is delicious with vegetables and meat, but most of the times this sauce is eaten with pasta. Easy to prepare, contains natural ingredients and perfect for vegetarians.
Ingredients for 4 people:
1 clove of garlic
1 anchovy fillet
1 tbsp. almonds
2 tbsp. olive oil
Wash the spinach well, cook and drain.
Crush the almonds with a mortar, add some water, so that a creamy consistency is achieved.
Fry the anchovy fillet in a pan with some oil and add the chopped garlic. Add the spinach and almond crème. Add salt to taste, stir well and simmer for about 15 minutes.
