Prescinseua - Antipasti
The name “prescinseua” is derived from the Genoese word “presû” and means " cheese
A light starter of simple ingredients. Typical Ligurian!
2 medium cucumbers,
200g soft cheese,
2 tbsp. olive oil,
Peel the cucumbers and cut into thin slices. Sprinkle these with salt to drain out the water.
Leave to rest for half an hour, then place the cucumbers in the fridge.
In the meantime, mix the soft cheese with the olive oil. Season with salt and pepper and mix in
the cucumber. Serve cold.
