Brandacoion - Antipasti
Brandacujun is a typical Ligurian dish made with simple ingredients: potatoes, stockfish, pine
nuts and olive oil. A traditional starter!
1 clove of garlic,
1 bunch of parsley,
40g pine nuts,
Boil the stockfish in plenty of water for half an hour. Boil the potatoes separately.
Remove the shin and bones of the fish. Puree the potatoes.
Chop the parsley, garlic and pine nuts, add some olive oil and mix with a dash of lemon juice.
Now place everything in a pot and stir well with a wooden spoon, until it achieving a smooth
consistency. Then warm and serve.
