Trofie alle noci - Primi Piatti
Trofie are twisted pasta shapes with tapered ends.
The name is derived from the word “strofissiá”, which indicates the scrubbing movement of the hand, when preparing this pasta. Particularly in Genua, this pasta is served with all sorts of dishes.
Ingredients for 4 people:
Melt the butter in a frying pan on medium heat, chop the walnuts, add these and some nutmeg and fry briefly. Then add the cream and simmer for two minutes. Add salt and pepper to taste.
In the meantime, cook the trofie in salted water until “al dente”.
Mix the pasta and sauce and serve. Buon Appetito!
