Description:
Vegetable soup. This Italian vegetable soup is traditionally served as a “primo piatto” in Liguria. The ingredients of the soup can be varied according to taste and seasonal availability of the products.

3 potatoes
 
2 aubergines
 
2 zucchini
 
2 onions
 
2 carrots
 
2 leeks
 
2 tomatoes
 
300g green beans
 
200g red beans
 
200g peas
 
300g rice
 
savoy cabbage
 
spinach
 
herbs
 
basil
 
garlic
 
pesto
 
olive oil
 
grated parmesan cheese
 
salt
Preparation:
Wash and chop the vegetables. Bring water with some salt to the boil, add vegetables and some olive oil, boil for a good 45 minutes. Then add the rice and stir. Add two or three spoonfuls of pesto. Serve hot or cold with grated parmesan cheese.
