Cundiun - Antipasti
A summery dish from Riviera dei Fiori (Blumenriviera).
This traditional speciality can be enjoyed as a starter or side dish.
4 large tomatoes,
2 green peppers,
2 tbsp. black olives,
2 spring onions,
1 clove of garlic,
1 tbsp. vinegar,
Wash and chop the vegetables. Mix the chopped vegetables and anchovies in a salad bowl.
Chop the garlic, tear up the basil leaves and add these, as well as the olives.
Add olive oil, vinegar, salt and pepper to taste.
Serve with bread.
